The total U.S. processing cabbage crop was harvested from 5,490 acres in 1997, yielding 183,670 tons (average yield/acre = 33.46 tons/acre), and a total value of $8,299,000. In 1997, production of cabbage for processing was up about 37.7% from 1996. Most of the processing cabbage is used for kraut.

The total U.S. fresh market cabbage crop was harvested from 79,830 acres with a total yield of 27,395,000 cwt in 1997 (average yield = 343 cwt/acre), and a total value of $279,291,000. In 1997, production of cabbage for fresh market was up about 12% from 1996.
